I’m having exactly, precisely the same problem. I think the fault lay in making that “Seam” between the halves of the transom/hull a crease line, and then not being able to undo it. Apparently, there is some issue that prevents the joining of two edges on a vertex line from being a chine/pointy. If I understand you correctly, you may have to get your hull back to a “transom-less” form, and draw it as if it were not a transom. i.e. just draw extra stations by hand, reducing the curvature until you get to the aftmost part. That’s what I did, but I could never get rid of that chine/hard edge.
