Hi Ian,
The process is just the same as with all previous DS versions, i.e. you select all the faces you want to be assigned to a particular layer and then select the layer you want those edges to be part of. If you have not defined any layer yet, then after selecting all your faces you can use the “Auto group” button and they will be assigned to a newly created layer. I have DS version 5.06 Pro and I have just checked it out.
What DS version do you have?
